IMPORTANT NOTES

Be very gentle when mixing ingredients - this is a critical control point. You don't want to mash anything.


Salting the avocado directly will make a big difference.


Make the juice / agave mix to your taste-preference.


Keep the chunks of avocado and grapefruit on the larger size; this really helps to keep the integrity of the flavors and will also give a good foundation for the dressing (juice / agave) to act on.


INGREDIENTS

Avocado

Grapefruit

Salt

Pepper

Agave


PROCEDURES

Supreme cut the grapefruit and then cut into large chunks (save the juice)


Use equal amount of Avocado and cut into the same size chunks as the Grapefruit


Lightly salt the avocado pieces


Slice mint into size of your choice


Very gently mix the Avocado, Grapefruit and Mint - This is a critical control point. If you mash the avocado even a little, it will really change the appearance and even the overall taste.


Mix the saved grapefruit juice with a little agave - just enough to knock down the bite, or a lot if you like it sweet. Pour this mixture over it all. Top it with pepper if you like.
